"Enchilada Meatballs"

Enchilada Meatballs

  • 1 lb Wahlburgers Ground Beef
  • 1 Packet Taco Seasoning
  • 1/3 Cup Tortilla Chips, Crushed
  • 1 Egg
  • 4 oz Colby Jack Cheese, Cut Into 12 Cubes
  • 1 Can Enchilada Sauce, 14 Ounce
  • 2 Green Onions, Sliced
  • 1/3 Cup Sour Cream
  1. 1. Preheat oven to 350°F.
  2. 2. In a standing mixer with paddle attachment (or by hand in a large mixing bowl) mix Wahlburgers ground beef with taco seasoning, crushed tortilla chips and egg until well combined. Divide into 12 equal portions on a sheet tray.
  3. 3. Holding a portion of the Wahlburgers beef mixture in the palm of one’s hand; take one cube of cheese and gently press it into Wahlburgers beef mix, encompassing the entirety of the cheese within the meat; roll to form a ball. Repeat with remaining Wahlburgers beef portions and cubed cheese.
  4. 4. Pour enchilada sauce in small casserole pan and place meatballs evenly in the sauce. Bake 30-35 minutes or until meatballs reach an internal temperature of 160°F.
  5. 5. Serve topped with green onions and sour cream.
  6. Tip: for an even distribution of sour cream and nice presentation, apply sour cream with a squirt bottle or from a zipper-locking plastic bag with corner snipped.
