  • 8 large eggs, beaten
  • 4 slices of Wahlburgers bacon, cooked and crumbled into bits
  • 2 medium potatoes, diced and parboiled
  • 1 cup cheddar cheese, shredded
  • 1 red bell pepper, diced
  • 1 medium onion, diced
  • 4 large flour tortillas
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Optional garnishes: sour cream, salsa, fresh cilantro
  1. 1. Sauté the Veggies: Heat a tablespoon of olive oil in a skillet over medium heat. Add the diced bell pepper and onion, sautéing until they are soft and slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.
  2. 2. Cook the Potatoes: In the same skillet, add a bit more olive oil if needed, and add the diced potatoes. Cook until they're golden brown and crispy, about 8-10 minutes. Season with salt and pepper to taste. Remove from the skillet and set aside with the sautéed peppers and onions.
  3. 3. Scramble the Eggs: Lower the heat to medium-low and add the beaten eggs to the skillet, seasoned with salt and pepper. Cook, stirring frequently, until the eggs are softly scrambled. Avoid overcooking.
