Ingredients:
- 1 Lb Certified Angus Beef Wahlburgers Ground Beef
- 1 Packet Taco Seasoning
- 1/3 Cup Tortilla Chips, Crushed
- 1 Egg
- 4 Oz Colby Jack Cheese, Cut Into 12 Cubes
- 1 Can Enchilada Sauce, 14 Ounce
- 2 Green Onions, Sliced
- 1/3 Cup Sour Cream
Instructions:
Preheat oven to 350°F.
In a standing mixer with paddle attachment (or by hand in a large mixing bowl) mix Wahlburgers ground beef with taco seasoning, crushed tortilla chips and egg until well combined. Divide into 12 equal portions on a sheet tray.
Holding a portion of the Wahlburgers beef mixture in the palm of one’s hand; take one cube of cheese and gently press it into Wahlburgers beef mix, encompassing the entirety of the cheese within the meat; roll to form a ball. Repeat with remaining Wahlburgers beef portions and cubed cheese.
Pour enchilada sauce in small casserole pan and place meatballs evenly in the sauce. Bake 30-35 minutes or until meatballs reach an internal temperature of 160°F.
Serve topped with green onions and sour cream.
Tip: for an even distribution of sour cream and nice presentation, apply sour cream with a squirt bottle or from a zipper-locking plastic bag with corner snipped.
